GOLDEN 'CHICKEN' GRAVY
Onion - 1 medium yellow or white, diced
Margarine - 4 Tablespoons
Flour - ½ cup
Nutritional Yeast - ½ cup
Soy or Rice or Almond Milk or Creamer - 2 - 3 cups
Vegan Chicken Base or Broth - 2 Tablespoons
Thyme - a pinch
Black Pepper - a pinch
Onion Granules - 1 Tablespoon (optional)
Garlic Granules - ½ teaspoon (optional)
In a small saucepan, saute the onion in margarine until soft and translucent. Meanwhile, in another pan, toast the flour, stirring frequently, until it begins to brown. Add the nutritional yeast to toast and take off the heat.
When the onion is cooked, add the flour and nutritional yeast mixture and mix thoroughly. Lower the heat and begin adding the soy milk a little at a time, stirring to prevent clumping until the gravy is the desired thickness.
Add the powdered broth and other spices. Adjust seasoning to taste.
Makes about 3 cups of gravy and freezes well!
